Cook Gluten Free class - 12 Mar

World Autism Day was on 2 Apr. We conducted a Cook Gluten Free class on 12 Mar as a prelude to mark this special day. What is Gluten free? Gluten is a protein found in many grains and can cause allergies in some people especially children. Such grains include wheat, barley, oats and rye. Though not 100% proven but a gluten free diet may help children with autism because many such children have gastrointestinal difficulties or suffer from a "leaky gut" which makes it hard for them to digest certain grains properly. Eating gluten leads to high levels of protein by-products which may in turn affect their behaviour. Take gluten out of the equation and behaviour is said to improve in autistic children.

Cooking gluten free diets is not as challenging or intimidating as you might think. Those starting on a gluten free diet will find it easier to try out simple recipes replacing wheat components with vegetables or other ingredients. Chef Bee shared with students some gluten free recipes which are not only yummy but easy to prepare too. Those of you who wish to know more, log on to our website at www.at19culinary.com

Bridal Shower Party: Mad for Macaroons - 29 Mar

When Shazlina e-mailed us to conduct a class on macaroons for a class of 7, little did we know that it was for one of the girl's Bridal Shower! What a superb idea. Girls get together, chit chat, have fun on a sunday morning whilst learning a new skill and making one of the most sought after dessert cookies in town. We aptly named the private party - Mad for Macaroons! The girls, all dressed in their party theme colours, black and white as you can see from the photo (comel-comel semuanya!). Psst! Bride-to-be is in the middle of the group.

The girls learnt how to make and bake macaroons with green tea, lemon and chocolate filings. There was lots of fun and laughter during the piping session as there were all shapes and sizes of macaroons. Those who dared tested the readiness (must be beaten until stiff) of their meringue by turning the mixing bowl over their heads! Yeap, they passed (luckily..). Everyone enjoyed themselves and had lots of macaroons to take home to show off to their mak, bapak, adik-beradik, cousin-cousin, boyfriend2 semua...pasti sedap ya!

Back to Basics: Fish class - 27 Mar

Chef Khai conducted his popular Back to Basics series for serious foodies who wish to learn the basics of all the different types of meat from how to cut it to how to cook it. Students learn which part of the meat is good for what type of dishes and how long to cook it. For the month of Mar, students learnt all there is to know about preparing and cooking "Fish".

Chef Khai shared proper techniques on how to filet a fish, debone, chop and slice. Students also learnt how to prepare aromatic fish stock, proper techniques to fry fish fillets to golden brown perfection, proper techniques to poach fish and how to prepare home made sauces to accompany fish dishes eg. tartar sauce, mayonnaise. To join our classes, check out our class calender at www.at19culinary.com
